Stef’s Crispy Chocolate Peanut Butter Powercubes

This recipe is inspired by Stef Madsen’s Gluten Free creation. She brought these to an ITC Party and they were a hit! This is a super simple recipe that’s easy to adapt.

  • 2 C. Natural Peanut Butter
  • 1 C. Honey
  • 4 Scoops of Protein Power (Proto Crunch Proto Whey-we sell it at the gym)
  • ½ mini chocolate chips
  • 3 C. of Rice Chex (crushed by hand, don’t blend, they turn into a powder and you’ll lose the crispiness)
  • Pinch of sea salt
  • ¼ t. of vanilla (optional)

Warm peanut butter in microwave for 30 seconds, just long enough to make it easy to mix. In a medium mixing bowl, blend peanut butter, honey, protein powder, sea salt and vanilla until smooth. Add mini chocolate chips and Rice Chex. Press into an 8×8 pan lined with parchment paper. Cool in the refrigerator for an hour. Cut into cubes. Makes 25 servings. Careful! These things are addictive. If you have problems with portion control, save them for parties!
