Healthy and Delicious “2-fer Meals”

We just got back from a fun boating expedition on Tablerock Lake over Labor Day Weekend. Derrick’s family owns a cabin down there. We had great weather and great food. I love having a kitchen available when we travel, because we love fresh home-cooked meals. However, I don’t like spending a lot of time cooking and cleaning while on vacation. So, I wanted to share a great “dinner then left-over-for-breakfast-idea” that Aunt Dwyn came up with:

Easy Clean Up Dinner

Chicken Breast

Kraft Light Zesty Italian Salad Dressing

Any pre-cut vegetables (we had carrot chips, bell peppers and onions)

potatoes (chopped in inch sized cubes)

olive oil

garlic powder, salt and pepper to taste

Place chicken in a ziplock bag to marinate (while you boat all day). Come in (maybe one too many totties on the boat??…. no worries, dinner is EASY). Fire up the grill, toss potatoes, veggies, olive oil, garlic powder, salt and pepper together then pack in foil packs and place on the grill ten to fifteen minutes before put the meat on. Grill chicken until it hits 165 degrees or juices run clear. Cover chicken with foil and let rest for about ten minutes. Serve dinner.

 

Next Day…

Easy Clean Up Breakfast Bowls

Leftovers from dinner  (potatoes, veggies, any leftover meat)

eggs

turkey sausage (chopped)

low fat shredded cheese

plain non-fat Greek Yogurt

Salsa

Heat leftovers in a skillet sprayed with non-stick cooking spray. Bring eggs to boil in a pot of cold water. Remove from heat, wait five minutes and then peel. Make your breakfast bowl with veggies, sausage, soft boiled egg, cheese, yogurt and salsa. YUM.
